If presented with a tray of cookies at Christmastime, chocolate crinkle cookies are one of the first that I will reach for. (The other is shortbread!) The dusting of powdered sugar which looks so much like snow always makes me think of winter and the holidays.

Ingredients
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • ⅓ cup vegetable oil
  • ½ cup unsweetened cocoa powder
  • 2 eggs
  • 1 teaspoons pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup powdered sugar
  • 2 tablespoons granulated sugar
Instructions
  1. Combine the granulated sugar, brown sugar and vegetable oil in a large bowl. Stir in the cocoa powder, add the eggs and vanilla extract and beat until all the ingredients are combined.
  2. In separate bowl, whisk the flour, baking powder and salt until combined. Gradually add the dry ingredients to the sugar mixture and stir until a soft dough comes together. Cover and refrigerate the dough for at least 1 hour or overnight.
  3. Pre-heat the oven to 350°F and line two baking sheets with parchment paper.
  4. Whisk the powdered sugar and 2 tablespoons granulated sugar together in a bowl. Scoop rounded tablespoons of the cookie dough and roll each scoop of the chilled dough into a ball. Then roll the balls in the powdered sugar mixture and place them on the cookie sheets, 2-inches apart from each other.
  5. Transfer the cookie sheets to the oven and bake the cookies at 350°F for 10 to 12 minutes. Let the cookies cool on the baking sheet for a few minutes and then transfer them to cooling rack to cool completely.
  6. Store the chocolate crinkle cookies in an airtight container for up to two weeks.
