Ingredients
- 4 5-ounce boneless, skinless chicken breasts
- salt and freshly ground black pepper
- olive oil
- 2 teaspoons butter
- 1 shallot minced
- 2 sprigs fresh thyme
- 2 cups dry sherry
- 1 cup chicken stock
- 3/4 cup heavy cream
- 1 tablespoon fresh thyme leaves

Pre-heat the oven to 170ºF.

Season both sides of the chicken breasts with salt and freshly ground black pepper.

Heat a large sauté pan or skillet over medium-high heat. Add the olive oil and butter and place the chicken in the pan. Reduce the heat to medium and brown the chicken well on both sides – about 4 to 5 minutes per side. Be patient and do not flip the chicken until it releases easily from pan. Transfer the browned chicken to a platter, loosely tent with foil and place it in a 170°F oven to keep warm.

Add the minced shallot and thyme sprigs to the pan and sauté until lightly browned. Add the sherry to the skillet and deglaze the pan by scraping up any brown bits on the bottom as you bring the liquid to a simmer. Simmer for a few minutes to reduce the sherry by half and then stir in the chicken stock and heavy cream. Simmer for another 3 to 4 minutes, until the sauce thickens slightly. Remove the sprigs of thyme and season with salt and freshly ground black pepper to taste. Return the chicken to the skillet, along with any juices on the plate. Simmer for just a few more minutes.

Transfer the chicken to a plate or platter, spoon sauce over top and garnish with fresh thyme leaves.
