This pineapple salsa is so delicious that it's hard not to want to put it on almost everything. Good news is... it's versatile that it actually works on almost anything, from tacos to grilled chicken, to just a bowl of tortilla chips.

  • ½ pineapple cut into ¼-inch cubes
  • 1 Jalapeño pepper minced
  • ¼ red onion finely diced
  • ½ red pepper finely diced
  • Juice of 1 lime
  • ¼ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ cup fresh chopped cilantro
  • Freshly ground black pepper
Instructions

  1. Make the pineapple salsa by combining the pineapple, Jalapeño pepper, red onion, red pepper, lime juice, chili powder and salt in a bowl. Season with freshly ground black pepper and stir in the fresh cilantro. Chill until ready to serve.
